My friend Alex (@azn.spice), one of my most trusted opinions on food, wine, and many of life’s enjoyments, first introduced me to Ginza Kagari a few years ago before I had any appreciation for noodles (I am a straight up rice person). I thought it was good–just fine–and I didn’t reach any ramen nirvana. Years later now that I am more accepting of noodles, I asked Alex again where I should go for my one and only ramen allocation during a recent trip to Tokyo and he still insisted Ginza Kagari was the ramen to have so I tried it again.

The shop is very small with a U-shaped bar seat wrapping around the staff puts together the ramen. It is an in-and-out kind of place: line up, sit down, slurp noodles, and get out. Don’t dwell as there are others waiting in line. Best to go alone or with just one person if you are self conscious about eating alone (but don’t be! Many people will be doing the same here).

This creamy white broth chicken ramen is possibly the most heavenly broth and ideal noodle texture combination in a bowl. It comes with an assortment of daintily cut vegetables like bamboo, baby corn, broccolini, lotus, soft cooked egg, white meat chicken, and chicken dumplings (what a bonus). You can also add extra portions of noodles, vegetables, egg, and chicken dumplings. The broth was magical and I think I could have just had the broth and noodles alone. Definitely a must-visit in Tokyo if you like ramen!
